Four appliances, one town, and no general repair work
Ranges, wall ovens, built-in refrigeration and panel-front dishwashers. Nothing else goes on the van.
A shop that will fix a pro range will usually also fix a washing machine and a dryer. It keeps a van busy, and it is a poor way to build the knowledge this equipment needs: manifold pressure and flame sense on one side, sensor drift and relay behaviour on the other, and enough familiarity with the cabinetry to know which appliances can come forward and which cannot.
Narrow also means stocked. The igniter, sensor, hinge spring, fan motor or inlet valve a unit wants is usually already on the van, so the visit that diagnoses the fault is frequently the visit that ends it.
And it means we will say when a repair is not worth it. An appliance with a failed control board and two other things starting to go is a replacement conversation, and you should have it on the first visit rather than after two parts orders.
Independent, and specific about it
We are not appointed by Viking and we do not claim to be. What we are is a shop that works on this equipment constantly, in a town where a great many kitchens have it, and that is a different kind of qualification: a 36-inch sealed-burner range behaves the way it behaves whoever signs the paperwork.
Practically, independence means two things. We buy factory-approved parts and fit them, and where a fault is properly a matter for the manufacturer under their own terms, we will tell you so and point you at them rather than charging you to find out.

Call
Model and serial from the plate if you can reach them, then what the appliance is doing and when it started. Most faults narrow to two or three candidates during that conversation, which decides what goes on the van.

Test
Gas and electrical tested separately. On a range that means manifold pressure and flame sense on one side, igniter draw and relay behaviour on the other. On a refrigerator it means airflow and defrost before anyone mentions a compressor.

Quote
The fault, the part, the labour, the total. In that order, out loud, before a panel comes off. You can decline at that point having paid the service call and nothing else.

The appliance is left running and checked, panels back where they were and alignment as it was found. If the same fault comes back, the return visit does not carry a second service call.
